We harvest our olives traditionally only at the optimal maturity level from early November through mid January latest. We conduct the harvest largely by hand with only limited technical support for the monumental trees.

 

We transport the olives to a selected PDO and organic quality certified mill on a daily basis, for first cold pressing within  12 hours, thus preserving the olive fruit from any oxidations or other harmful effects.
